Job Summary:The Production Chef has the main responsibility of preparing and producing products following agreed product specifications/recipes to produce within the factory operations in a hygienic and safe manner, maintaining safe and legal responsibilities at all times. To work as part of the Production Team in any one of the TRUEfoods business units guiding and directing junior members of the team. To take accountability for product quality in line with set TRUEfoods product standards or those agreed with specific customers. Key Tasks/Responsibilities: Ensuring the correct booking in, storage and labelling of raw materials, work in progress, finished product and packaging (ambient / chilled / frozen / allergens). Completion of associated related paperwork for each product made daily.Collecting of raw materials / packaging for processing. Follow a variety of procedures and methods to produce products as per agreed specifications, and as required (e.g. weighing, prepping, cooking, packing, labelling) ie Load and unload 500kg kettles with correct bones, (potentially 140kg beef bones.Correctly record detailed processing information on documentation as required.Carry out and record CCP’s as trained in these procedures and record accordingly within the appropriate time span of processing or cooking or packing.Operate and maintain machines as trained in specific procedures, reporting directly any anomalies directly to the Technical Manager or MD.Stock & Sauce Kitchen: Load & unload kettles with bones, vegetables & herbs and water, pass stock twice through muslin following without fail specific recipes. Terrine Kitchen: Follow product specifications without fail to make samples and volume batches of terrines/pates.As and when required be present at factory trials and pre-production runs. This is highly likely to be outside of usual working hours. Factory trials and pre-production runs are likely to take place in the evening and early morning ie any time from 3am.Inspect, date code and pack the final product working at a pace to agreed time frames to ensure that all products are packed at a temperature above 72° then placed in the blast chiller.Clean and sterilise the factory processing area and equipment as per cleaning procedures and document.Manually dispose of waste in the correct manner; separating bone waste from fat waste and liquid residue.Operate in a clean and hygienic manner at all times that does not compromise the food safety, legality and quality of TRUEfoods products. Adhere to strict uncompromising procedures and complete documentation within the agreed daily time schedule.To bring to the attention of a senior member of staff any situation that may compromise food safety, legality or quality. ie the discovery of unfit or out of date food, any contamination risk, or any pest sighting or anything else that you may deem to cause concern.Maintain the highest standards of personal hygiene, particularly in relation to dress, head gear, frequent hand washing and use of antibacterial gels.Ensure entry to areas of food production for which they are authorised, and only do so after dressing in the appropriate protective clothing and hand washing. Must participate in all food hygiene training as requested within work time.Critical to work at a pace as part of a communicative and supportive member of the production team in conjunction with the technical, development and dispatch teams.Accountable for guiding, directing and motivating other production operatives and training new team members.
